Delicate halibut is best matched with a light-bodied, low-tannin red such as Pinot Noir to avoid overpowering the fish.

Instructions: HOW TO COOK The perfect halibut Chef's Tips You will need: Heavy-bottomed skillet, sea salt, cracked black pepper and oil (skillet, salt shaker, pepper mill, and oil bottle illustration) Preparation is key (halibut being pat dry and seasoned illustration) Thoroughly pat dry the halibut fillet with kitchen towel. Once dry, season generously with sea salt and cracked black pepper just before cooking. Avoid salting too early, as it can draw out moisture and compromise the sear. Tips for cooking the perfect halibut (halibut in pan illustration with fish spatula) Pre-heat your heavy-bottomed skillet over a medium-high heat for two minutes. Add a thin layer of oil to the pan, the oil is ready when it flows easily. Carefully place the seasoned halibut fillet into the hot pan, skin-side down. Lay away from you to prevent oil splatter. Allow the fillet to cook undisturbed for 5-6 minutes, depending on thickness. You will see the edges turn opaque and a golden-brown crust form. When the bottom half of the halibut is cooked through and releases easily from the pan, it is time to flip. Using a thin, flexible fish spatula to gently lift and turn the fillet. After flipping, reduce the heat to medium and add a knob of unsalted butter to the pan. Tilt the pan and spoon the golden butter over the fish for 3-4 minutes. We recommend serving on a bed of pan fried asparagus, topped with parmesan shavings and a squeeze of lemon. PAN FRY Chilled 10 mins Pre-heat your non-stick frying pan over a medium-high heat. Add a thin layer of oil to the pan. Lay away from you to prevent oil splatter. Allow the fillet to cook undisturbed for 5-6 minutes. Using a thin, flexible fish spatula to gently lift and turn the fillet. After flipping, reduce the heat to medium and add a knob of unsalted butter to the pan. Tilt the pan and baste the fish for 3-4 minutes.

Storage

Not suitable for freezing. Keep refrigerated. Once opened, consume within 1 day and by ‘use by’ date shown.
