The perfect pairing for your seabass fillet is a crisp, unoaked white wine like a Sancerre, Chablis, or Albariño.

Shallow Fry

Instructions: HOW TO COOK The perfect seabass Chef's Tips You will need: Heavy-bottomed skillet, sea salt, cracked black pepper and oil (skillet, salt shaker, pepper mill, and oil bottle illustration) Preparation is key (seabass being pat dry illustration) Thoroughly pat dry the seabass fillet with a kitchen towel. Once dry, drizzle oil over the skin and season generously with sea salt and cracked black pepper just before cooking. Avoid salting too early, as it can draw out moisture and compromise the sear. Tips for cooking the perfect seabass (seabass in pan illustration with fish spatula) Pre-heat your heavy-bottomed skillet over a medium-high heat for two minutes. The pan is ready when a few drops of water sizzle and evaporate instantly upon contact. Carefully place the seasoned seabass fillet into the hot pan, skin-side down. Lay away from you to prevent oil splatter. Allow the fillet to cook undisturbed for 5-6 minutes. You will see the flesh turn opaque from bottom up. When the bottom half of the seabass is cooked through and releases easily from the pan, it is time to flip. Using a thin, flexible fish spatula, gently lift and turn the fillet once. The skin should be golden-brown and crisp. Reduce the heat to medium and add a knob of unsalted butter to the pan. Tilt the pan and spoon the golden butter over the fish for 2-3 minutes. PAN FRY Chilled 7-9 mins Thoroughly pat dry the seabass fillet with a kitchen towel and season with sea salt and cracked black pepper. Heat 1tbsp (15ml) of oil in a non-stick pan. Add the seabass to the pan. Lay away from you to prevent oil splatter. Cook undisturbed for 5-6 minutes. Turn the seabass fillet using a flexible fish spatula. Turn the heat to medium, add a knob of unsalted butter and cook for a further 2-3 minutes, continually basting the fillet.

Storage

Suitable for freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Defrost thoroughly for a minimum of 10 hours in the fridge. Once defrosted use within 24 hours and do not refreeze. Follow the preparation guidelines above. This product has been previously frozen and restored to chill temperature under carefully controlled conditions. It is still suitable for freezing. Keep refrigerated. Once opened, consume within 1 day and by ‘use by’ date shown.
