Zesty citrus chicken with slaw recipe

Chicken breasts are coated in a citrussy honey mustard marinade and roasted until golden. They're served atop a bed of slaw made with apple, cabbage and radishes. A light and bright dinner that's super-tasty and healthy too!

Ingredients
- 1 orange, finely zested and juiced
- 1 lemon, finely zested and juiced
- 1 lime, finely zested and juiced
- 1 tbsp runny honey
- 1 garlic clove, crushed
- 2 tsp wholegrain mustard
- 10g thyme, finely chopped
- 10g coriander, finely chopped
- 4 chicken breasts
- green salad, to serve (optional)
For the slaw
- 1 green apple
- juice of ½ lemon
- ¼ white cabbage, finely sliced
- 120g radish, finely sliced
- ½ red onion, finely sliced
- 150ml kefir yogurt
- 3 tbsp mayonnaise
- 15g parsley, finely chopped

Method
- Put the orange, lemon, lime zest and juice into a large shallow dish with the honey, garlic, mustard, thyme and coriander. Mix well.
- With a sharp knife, make shallow slits in each chicken breast. Add to the marinade, toss to coat, cover and chill in the fridge for 30 mins, or up to 4 hours. Preheat the oven to 190ºC, 170ºC, gas.
- Line a roasting tin with baking paper, arrange the chicken on top, in a single layer. Spoon some of the remaining marinade left in the bottom of the dish over the chicken. Roast for 25 mins, basting halfway through cooking with the last of the remaining marinade, cook until golden and cooked through.
- Meanwhile, roughly grate the apple, add to a bowl with the lemon juice and gently mix. Add the remaining coleslaw ingredients and mix well. Serve with the chicken, and a green salad, if you like.
