Wholemeal waffles with sunshine citrus

Try our wonderful waffle recipe, served with blood oranges and honey, for a healthy weekend brunch. If you don’t have a waffle machine, cook the waffles on a lightly greased griddle pan over a medium heat for 5 mins each side.

Ingredients

  • 260g wholemeal or white plain flour
  • 3 tbsp golden caster sugar
  • 1 tbsp baking powder
  • 3 blood oranges, ½ finely zested
  • 1 lemon, zested
  • 500ml semi skimmed milk
  • 2 medium eggs, lightly beaten
  • 1 tsp vanilla extract​
  • vegetable oil, for greasing
  • 100g Greek-style natural yogurt, to serve
  • 3 tbsp clear honey

Method

  1. Preheat the oven to gas 1⁄4, 100°C, fan80°C.Mixtheflour,sugar, baking powder, orange zest and half the lemon zest in a mixing bowl. In a separate bowl, whisk the milk, eggs and vanilla until well mixed, then slowly whisk into the dry ingredients to make a smooth batter.
  2. Spray or grease a waffle machine with oil and pour in one-sixth of the mixture. Close the machine and cook for 5-6 mins until golden. Keep warm on a tray in the oven while you make the rest. Peel and slice the oranges into thin rounds. Serve with the waffles, a dollop of yogurt, the rest of the lemon zest and a drizzle of honey.
