Very berry knickerbocker glory

Make the most of the seasonal weather with this deliciously fruity knickerbocker glory. Bursting full of gorgeous berries and creamy frozen yogurt, this dessert is a real fruity treat.

Ingredients

  • 250g (8oz) strawberries, with stems attached
  • 4 tbsp icing sugar
  • 125g (4oz) low-fat Greek-style yogurt
  • 1/2 x 250g bag frozen summer fruits
  • 1 tsp arrowroot powder
  • 1 x 125g (4oz) punnet blueberries
  • 8 scoops mixed berry frozen yogurt

Method

  1. Line a baking tray with nonstick baking paper. Roll half the strawberries in 2 tbsp of the icing sugar. Shake off any excess, and then dip in the yogurt. Lay the dipped berries on the baking tray and freeze for 2 hours, to set.
  2. Put the frozen summer fruits into a small pan, along with the remaining icing sugar and allow to cook down gently for 4-5 minutes. Pass through a sieve and refrigerate until cool.
  3. Mix 1 tbsp of water with the arrowroot and stir through the sauce to thicken. Transfer to the fridge to cool.
  4. Hull and slice the remaining half of the strawberries.
  5. Mix the sliced strawberries with the remaining punnet of blueberries and divide one third of them between four sundae glasses. Top with a scoop of frozen yogurt. Divide the summer fruit sauce between the glasses. Repeat the process with the berries and frozen yogurt. Top with the summer fruit sauce, remaining berries and frozen strawberry halves.
