Turkey schnitzel burgers with houmous

Having a turkey burger for lunch doesn't exactly set your pulse racing, does it? A turkey schnitzel burger though? Now we're talking. Breaded and fried in a crisp, delicious coating, these turkey schnitzel burgers are unlike anything you've had before. Slather in houmous for the ultimate bite.

    Ingredients

    • 1 onion, peeled
    • 500g (1lb) turkey mince
    • 1tbsp dried mixed herbs
    • 3tbsp breadcrumbs
    • salt and freshly ground black pepper
    • 3tbsp rapeseed oil
    • 2 eggs, slightly beaten
    • 150g breadcrumbs
    • 100g fine matzah meal
    • 4 seeded burger buns, sliced in half
    • 4tbsp red pepper houmous
    • 2 whole pickled gherkins, sliced
    • 1 red pepper, seeded and sliced into thin strips

    Method

    1. Place the onion in the food processor to finely chop. Remove and set aside. Mix the turkey with dried mixed herbs, onion, breadcrumbs, salt and freshly ground black pepper. With wet hands divide the mixture into 4. Coat into beaten egg followed by cornmeal meal. Coat again in the egg and finally into the breadcrumbs mixture. Heat a large frying pan with rapeseed oil. Pre-heat the oven to 200 C/ 400 F/ Gas mark 6.
    2. Fry the burgers on both sides until golden, then transfer to a plate lined with kitchen paper. Place in the oven for 10 minutes to complete cooking. Toast the burger buns in the oven for 5 minutes. Spread some houmous on to each burger bun. Top with some sliced pepper, gherkins and finally the cooked schnitzel burger.
