Sausages; is there any food kids love to eat more? If yours is a big fan they'll love this quick and easy pasta recipe made with orzo, hidden veggies, sausages and cream cheese.

    Ingredients

    • ½ tbsp vegetable oil
    • 3 reduced-fat pork sausages, skin removed and cut into small chunks
    • 1 small onion, finely chopped
    • 1 celery stick, finely chopped
    • 150g orzo
    • 1 reduced-salt vegetable stock cube, made up to 500ml
    • 2 tbsp 50% less-fat soft cheese
    • 15g flat-leaf parsley, chopped
    • 30g wild rocket
    • 2 cherry tomatoes, quartered

    Method

    1. Heat the oil in a large frying pan over a medium heat. Add the sausage, onion and celery and fry for 5 mins until the sausage is golden.
    2. Add the orzo and stock, bring to the boil and cook for 15 mins, stirring occasionally, until the orzo is al dente. Add a splash more water if the mix becomes too thick.
    3. Remove from the heat and stir through the cream cheese and parsley. Serve with the rocket and tomatoes.
