Smoky chipotle pork chops recipe

There's nothing quite like a summertime barbecue. These smoky pork chops are smothered in a homemade chipotle paste then cooked over coals until charred and juicy, serve with salad and lime wedges for a fresh summer meal

Ingredients
- 1tbsp of smoked paprika
- 1 red chilli de-seeded and roughly chopped
- 2tsp demerara sugar
- 1tbsp groundnut oil or sunflower oil
- 1 tsp soy sauce
- 1tbsp tomato ketchup
- zest and juice of 1 lime
- 2 sprigs of fresh thyme
- 4 pork chops about 175g each
- 4 bay leaf
- lime wedges, to serve (optional)
- Salad, to serve (optional)

Method
- Put everything except the pork and bay leaves in a food processor and blend into a rough paste, smooth over the pork chops. Set aside in the fridge for 20-30 minutes.
- When the BBQ coals are white and the flames have died down, top each chop with a bay leaf and grill for 7-10 minutes each side or until the juices of the meat run clear.
- Serve with a lime wedges and a crisp green salad.
