Sausage and cheesy mash with tomato gravy recipe

Sausages and mash is a comfort food classic. We've taken it up a notch here by adding a homemade tomato and onion gravy recipe and grating Cheddar into the potatoes for an extra indulgent cheesy mash.

Ingredients
- 1.5kg potatoes, peeled and chopped
- 8 pork sausages
- ½ tbsp vegetable oil
- 300g frozen crunchy vegetable medley
- ½ tbsp butter
- 100g Cheddar, grated
- 100ml semi-skimmed milk
For the gravy
- 1 tbsp vegetable oil
- 2 onions, finely sliced
- 4 tomatoes, sliced
- 1 tbsp flour
- 1 chicken stock cube, made up to 500ml
- 1-2 tbsp Worcestershire sauce

Method
- Start by making the gravy. Heat the oil in a saucepan over a medium heat and fry the onions for 10 mins, until softened and turning lightly golden. Stir in the tomatoes and fry for 1 min. Pour in the chicken stock and Worcestershire sauce, stir well and simmer for 15 mins to reduce and thicken.
- Meanwhile, boil the potatoes in a large pan of salted water for 15 mins until tender.
- Preheat the grill to medium high. Put the sausages on a baking tray, drizzle over the oil, and grill for 15 mins until cooked through, turning halfway through. Boil the veg medley for 5 mins until tender, drain, then toss through the butter.
- Drain the potatoes and return to the pan. Stir in the grated Cheddar and milk and mash until smooth. Serve the mash and veg with the sausages, and a jug of gravy to serve.
