Pizza with fresh figs, ricotta, thyme and honey recipe

Add a touch of sophistication to your pizza with this vegetarian version. This simple pizza recipe uses a unique ingredient combination of fig, ricotta, thyme and honey.

Ingredients
- 600g ‘00’ flour
- 2g (1 tsp) fast-action dried yeast
- 2g (1 tsp) salt
- 350ml (10 1/2fl oz) cold water
- 250g (8oz) ricotta cheese
- 2 tbsp thyme leaves, chopped
- 4 figs, quartered
- 2 tbsp olive oil
- 2 tsp honey

Method
- In a large bowl, combine the flour, yeastand a generous pinch of salt. Gradually mix in the water until you have a soft but not sticky dough (you may not need all the liquid). On a floured surface, knead the dough for 10-15 minutes or until smooth and elastic. Place in a large, slightly oiled bowl and cover with cling film. Leave in a warm (not hot) place for 12 hours or overnight.
- Preheat the oven to the maximum temperature. When your dough has proved, remove from the bowl, put on a lightly floured surface again and punch out all the air. Knead for another minute. Divide the dough into two or four and, using a rolling pin, roll out until very thin. Put onto a baking tray and spoon half the ricottaon top (or a quarter if you are making 4 small pizzas) and smooth it carefully over the dough, leaving a small space for the crust at the edge.
- Sprinkle over the thyme, figs and olive oil and bake for 10-12 minutes or until the pizza is golden and crisp. Drizzle over the honey and serve.
