Mango and mint grown up slushies

Make your childhood favourite slushie with a delicious, grown-up twist. Enjoy those sunny days with these exotic mango and mint drinks and keep cool the tasty way during barbecue season.

Ingredients

  • 150ml (5 fl oz) sugar-free lemonade
  • 300ml (1/2 pint) mango juice
  • 100ml (3 1/2 fl oz) white rum (optional)
  • 100g (3 1/2 oz) mango flesh, chopped
  • 10 fresh mint leaves and two sprigs, for garnish

Method

  1. Take two empty ice cube trays or ice cube bags and pour the lemonade into one and the mango juice into the other. Freeze until solid.
  2. Once frozen, remove the cubes from the tray and add to the blender with the rum, most of the mango (leave a few chunks for garnish) and the mint leaves and pulse until you have a good consistency.
  3. Pour into glasses, garnish with the mint leaves and the rest of the mango (simply sprinkle a few little cubes on top) and drink with straws.
  • Tip: If you’re leaving out the rum, add a little extra mango juice
