Lentil and apricot tagine

Create a hearty dinner for one with this super quick and easy veggie tagine mug meal. Not only does it only take just minutes to cook in the microwave, but it's packed with flavour from harissa paste, is vegetarian, gluten-free and healthy, too.

Ingredients

  • 3 dried apricots, roughly chopped
  • 1 shallot, finely diced
  • 1 tsp harissa paste
  • ½ tsp ground cumin
  • 1 tsp red wine vinegar
  • 1 tsp honey
  • 8 cherry tomatoes, halved
  • ½ x 390g tin green lentils
  • 2 tbsp Greek-style yogurt or tzatziki

Method

  1. Put the apricots in a large microwaveproof mug with the shallot, harissa paste, cumin, vinegar and honey. Pour in just enough water to cover, then add the tomatoes. Place some clingfilm over the top, pierce once and microwave on high for 2 mins.
  2. Remove the clingfilm. Drain and rinse the lentils, then stir into the mug. Re-cover and microwave for a further 2 mins. Top with a dollop of yogurt or tzatziki and tuck in.
