Cookies and cream are the ultimate dessert combination, so how about vanilla ice cream sandwiched between two chocolate cookies? Kids and grown-ups alike will love this delicious sweet treat.

    Ingredients

    • 65g margarine, softened
    • 60g (2 1/2oz) caster sugar
    • 50g (2oz) brown sugar

    For the pancakes

    • 75g plain flour
    • 25g (1oz) cocoa powder
    • 1 small egg
    • 1 tsp bicarbonate of soda
    • ½ tsp baking powder
    • ½ tsp salt
    • 1/2 tsp vanilla extract
    • 150g (5oz) milk chocolate chips
    • 200ml vanilla ice cream, softened

    Method

    1. Pre-heat the oven to 190°C. Line and grease a baking tray.
    2. In a mixing bowl, combine the margarine and sugars until light and fluffy. Beat in theeggand the vanilla extract. Sift in the flour, cocoa powder, bicarbonate of soda, baking powder and salt and mix well until smooth.
    3. Stir in the chocolate chips, making sure they are evenly spread into the dough. Take a tablespoon of the dough and roll into a ball before placing on the baking tray and flattening a little. Repeat until you have 24 cookies. Bake for 8-10 minutes roughly and allow to cool on the baking trays for a few minutes before cooling completely on a wire rack.
    4. Once cool, take a scoop of the softened vanilla ice cream and place on the underside of a cookie. Sandwich another cookie on top and squeeze to distribute the ice cream evenly in the middle of the sandwich.
    5. Use a palette knife to tidy up the edges before serving immediately.
