Glazed ham with roasted plums and green beans

Ingredients

  • 2kg gammon joint
  • 3 tbsp soft brown sugar
  • 12 star anise, 2 finely crushed, 10 to decorate
  • 2 tbsp maple syrup
  • 3 tbsp wholegrain mustard
  • 6 plums, stoned and halved
  • 400g fine green beans, trimmed
  • 2 tbsp olive oil
  • 50g hazelnuts, finely chopped

Method

  1. Put the gammon in a large pot. Cover with water and simmer for 3 hrs, or until tender.
  2. Preheat the oven to gas 6, 200°C, fan 180°C. Drain the ham and let it cool for 10 mins. Slice off the rind, leaving a 1-2cm layer of fat. Put in a roasting tin and cut a diamond pattern into the fat.
  3. In a small bowl, mix together the sugar, crushed star anise, maple syrup and mustard. Rub all over the ham, reserving a little and using it to coat the plums. Roast for 15 mins then add the plums. Roast for a further 15 mins until the ham is sticky and tender.
  4. Meanwhile, prepare the beans. Bring a large pan of water to the boil. Add the beans and cook for 2 mins. Drain and toss with the olive oil, hazelnuts and seasoning.
  5. Press the remaining star anise onto the surface of the ham. Serve on a large platter with the plums and green beans.
