Garlic pesto bread

Give your garlic bread a lift by mixing pesto and chopped basil into the garlic butter, then pop it on the barbecue for a winning dish the whole family will love.

Ingredients

  • 75g unsalted butter, softened
  • 4 garlic cloves, peeled and crushed
  • 50g (2oz) classic green pesto
  • handful basil, roughly chopped
  • 1 x white baton

Method

  1. In a small bowl combine the softened butter, pesto, crushed garlic and chopped basil. Make 1-inch thick slices into the bread, but do not go all the way through, just to the bottom crust. Put a teaspoon or two of the butter mixture between each slice.
  2. Wrap the bread in foil and place on the barbecue for 12-15 mins. Unwrap and serve.
  • Tip: To cook this in the oven rather than on a barbecue, preheat the oven to gas 6, 200°C fan 180°C and place the foil parcel on a baking tray for 15 mins. Remove, unwrap and serve.
