'Everything bagel' salmon recipe

We've topped a side of salmon with a trendy 'everything bagel' topping. It looks impressive but is a doddle to make. This is the perfect easy entertaining dish for Easter or Sunday lunch, however if you want to make it on a smaller scale, see our tip, below.

Ingredients
- 6 red onions, cut into wedges
- 3 tbsp olive oil
- 2 tbsp capers, rinsed
- 3 lemons, 2 juiced, 1 cut into wedges to serve
- 800-1kg boneless salmon side
- 2 tbsp sesame seeds
- 2 tbsp nigella seeds
- 2 tsp garlic granules
- 1 tsp sea salt fakes
- 15g fresh dill, fronds picked

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Toss the onion wedges in a baking dish with half the oil; season. Roast for 25 mins, tossing halfway until soft. Stir in the capers and juice from 1 lemon.
- Meanwhile, lay the salmon, skin-side down, on a lined baking tray. Mix the remaining oil and lemon juice and brush all over the salmon flesh.
- Mix the sesame and nigella seeds with the garlic granules and salt, then scatter over the fish. Roast in the oven for 30 mins until cooked through. Leave the fish to rest for 5 mins.
- Serve the salmon with the roasted onions, scattered with the dill fronds and with the lemon wedges on the side.
- Tip: Try this with salmon fillets; top with the seed mix and roast for 10-12 mins.
