Espresso martini cupcakes

For a last minute Valentine's Day dessert, try these espresso martini cupcakes. Using mini chocolate chip muffins as a handy shortcut, add a drizzle of espresso martini liqueur and top with a swirl of buttercream icing for a sweet treat for two.

Ingredients

  • 120g vanilla frosting
  • 4 tsp Finest Espresso Martini
  • 4 tbsp icing sugar
  • 4 mini double chocolate muffins
  • 8 coffee beans (optional)

Method

  1. Put the vanilla frosting in a bowl and stir through 2 tsp of the espresso martini. Next, stir through 3 tbsp of icing sugar until it is thick and holding its shape. Add another 1 tbsp icing sugar if necessary and stir.
  2. Cut the very top peaks from the muffins to level. Prick each cupcake with a fork and drizzle over the remaining espresso martini (½ tsp over each one). Put a generous spoonful of the frosting on top of each cake and smooth with the back of the spoon or a butter knife. Decorate each with 2 coffee beans, if using.
