Crispy bacon lasagne

Can you cook lasagne in a mug? Yes, you can with this super simple mug meal recipe for a hearty lasagne for one. With layers of fresh pasta, instant cheese sauce and crispy bacon, it's the ultimate comfort food and ready in under 10 minutes. To make this vegetarian, swap the bacon for frozen aubergine slices, and the Parmesan for vegetarian hard cheese.

    Ingredients

    • 2 fresh egg lasagne sheets
    • 20g Parmesan, grated
    • 20g light Cheddar, grated
    • 100g ricotta cheese
    • 8 tbsp bolognese pasta sauce
    • 3 ready-to-eat smoked bacon strips, broken into pieces

    Method

    1. Using kitchen scissors, snip the lasagne sheets into smaller squares and drop them into a mug. Cover with boiling water and set aside to soften for 5 mins.
    2. Meanwhile, mix both the grated cheeses together. Reserve a little for the topping, then mix the rest with the ricotta and plenty of freshly ground black pepper.
    3. Drain the pasta and, in a separate, large microwave-proof mug, alternately layer the pasta, spoonfuls of bolognese sauce, the ricotta mix and pieces of bacon.
    4. Cover the mug with clingfilm, then pierce it with a fork. Microwave on high for 3 mins. Remove the clingfilm, sprinkle the reserved grated cheese on top and serve.
