Method

  1. Put the frozen cranberries, clementine zest and sugar in to a 2ltr sterilised* jar. Pour over the gin, then mix to combine. You can also do this in 2 x 1ltr sterilised* bottles, dividing the ingredients equally between them.
  2. Leave for 5 days at room temperature, out of direct sunlight to infuse, shaking once a day.
  3. Strain to discard the cranberries and zest, then bottle in sterilised* jars or gift bottles. Decorate with labels or ribbon. This will keep in a sealed container for up to a month.
    • *To sterilise glass jars, wash in hot, soapy water and rinse well. Dry in the oven for 15-20 mins at gas 1, 140°C, fan 120°C until hot and completely dry. Boil metal lids and rubber seals for 10 mins, then leave to dry.
