Crab cakes

These crab cakes are luxurious yet surprisingly easy to prepare: dressed crab is mixed with mashed potato, flavoured with chilli, pepper, parsley and spring onions, then coated with breadcrumbs and fried. Serve with mayonnaise and a green salad for a delicious starter or light main course.

Ingredients

  • 250g potatoes, peeled
  • 1 dressed crab
  • freshly ground black pepper
  • 2 spring onions, very finely chopped
  • 1 tbsp finely chopped parsley
  • ½ red chilli, deseeded and finely chopped
  • 1 egg, beaten
  • 100g breadcrumbs
  • vegetable oil for frying

Method

  1. Boil the potatoes until soft and mash thoroughly. Fold in the dressed crab. Mix in the spring onions, parsley and chilli. Shape mixture into 12 small cakes about 4cm across.
  2. Dip cakes into the egg and coat in breadcrumbs. Heat the oil in a shallow pan and fry the cakes on each side for 3-4 minutes. Serve with lime wedges, salad leaves and mayonnaise.
