Coronation chicken sliders

Coronation chicken is a royal British street party classic, given an American makeover here and transformed into moreish chicken sliders. Spiced marinated chicken, fresh salad and tangy curried mayonnaise with a hint of mango chutney are layered in these delicious mini burgers for a perfect party snack.

Ingredients

  • 4½ tsp mild curry powder
  • 1 tsp turmeric
  • 5 tsp vegetable oil
  • 3 chicken breasts
  • 1-2 tbsp light mayonnaise, to taste
  • 8 white snack rolls (from a 12 pack), split and toasted
  • ½ cucumber, thinly sliced
  • 3 tbsp mango chutney
  • 15g fresh coriander, leaves picked

Method

  1. Mix 3 tsp curry powder, the turmeric, oil and a pinch of salt in a bowl. Add the chicken and turn to coat all over.
  2. Preheat a griddle pan or grill to hot. Cook the chicken for 7-8 mins, turning halfway, until cooked through. Set aside for 5 mins to cool slightly.
  3. Meanwhile, in a small bowl, mix the remaining curry powder into the mayonnaise. Spread over the bottom halves of the snack rolls and top with some sliced cucumber.
  4. Slice the cooked chicken then divide between the bases of the rolls. Top with mango chutney, coriander and the roll top. Secure with small burger skewers or cocktail sticks, if you like.
