Cauliflower pasta recipe

Ingredients
- 1 large cauliflower
- 350g (12oz) shell pasta
- 1 tsp dried chilli flakes
- 2 garlic cloves, crushed
- 100ml white wine
- 4 tbsp pecorino chunks
- 2 tbsp parsley, chopped

Method
- Preheat the oven to gas 7, 220°C, fan 200°C.
- Divide the cauliflower into small florets, drizzle over a little oil and season. Roast for 20 minutes or until tender and golden.
- Meanwhile, bring a large pan of lightly salted water to the boil and cook the pasta according to the packet instructions.
- In a large frying pan, heat a little oil and add the chilli flakes and garlic and cook on medium until golden. Add the cauliflower, turn the heat up and cook for a couple of minutes. Pour in the white wine and cook until reduced slightly. Add the drained pasta and mix well. Stir in the pecorino cheese and parsley and serve.
