Caramelised mustard lentils with sausages recipe

Another dinner done and dusted in under half an hour, this indulgent recipe is a great way to introduce lentils into your diet. Pair with juicy, browned sausages and season with balsamic glaze for a dinner that hits all the right notes.

Ingredients
- 1 tbsp olive oil
- 20g butter
- 2 onions, peeled and sliced
- 1tbsp wholegrain mustard
- 150g green lentils
- 2tbsp crème fraiche
- 2tbsp freshly chopped parsley
- 8 sausages

Method
- Heat the oil and butter together in a pan and add the onions. Fry the onion for 10-12 minutes on a low heat, until it starts to caramelize and turn lightly golden. Meanwhile, grill the sausages for 12-15 minutes, turning regularly until cooked through. Stir the mustard, crème fraîche and parsley into the lentils. Season to taste.
