Caramel poached pears

For an easy dinner party dessert that will really impress, try this poached pears recipe. Make a syrupy caramel with cardamom, cinnamon and vanilla in which you can poach the pears and serve with mascapone for extra indulgence, or keep it vegan with dairy-free crème fraîche.

    Ingredients

    • 300g (10oz) soft brown sugar
    • 2 cardamom pods
    • 1 cinnamon stick
    • 1 vanilla pod, split, seeds scraped out
    • 6 firm pears, peeled
    • mascarpone or creme fraiche, to serve

    Method

    1. Pour 1 litre water into a large saucepan with a fitted lid. Add the sugar, cardamom and cinnamon stick.
    2. Stir in the vanilla pod and seeds, then bring the mixture to the boil. Reduce to a simmer and add the pears. Cover and cook for 20-25 minutes, then remove the pears and set aside.
    3. Turn the heat back up and boil the poaching liquid for 20 minutes, until reduced and syrupy. Discard the spices.
    4. Serve the pears in bowls with the syrup poured over them and a spoonful of mascarpone or crème fraîche.
