Brown rice pilaf

Swapping to brown rice is a great idea if you're trying to get more fibre into your diet. This easy pilaf makes the most of earthy, autumnal flavours like mushrooms and hazelnuts tossed through the flavourful rice.

Ingredients

  • 1tbsp olive oil
  • 1 onion, peeled and diced
  • 1 stick celery, diced
  • 200g chestnut mushrooms, diced
  • 225g brown rice
  • 600ml vegetable stock
  • 75g hazelnuts, toasted and chopped
  • salt
  • pepper

Method

  1. Heat the olive oil in a pan and sauté the onion, celery and mushrooms for 4-5 mins before stirring in the rice. Pour in the stock, bring to the boil, and then simmer for 25 mins, until the rice is tender.
  2. Stir in the toasted and chopped hazelnuts, season and serve with rice or chicken.
