Banana soda bread

This is not your classic loaf. Flavoured with buttermilk and bananas, this fruity take on Irish soda bread is simply delicious - all you need is a hearty helping of butter to spread on top.

Ingredients

  • 250g (8oz) self raising wholemeal flour
  • 250g plain flour
  • pinch salt
  • ½ tsp bicarbonate of soda
  • 2 tbsp golden caster sugar
  • 300ml (10fl oz) buttermilk
  • 2 ripe bananas, thinly sliced

Method

  1. Preheat oven to gas 6, 200ºC, 400ºF. Place the flours, salt, bicarbonate of soda and sugar into a large bowl and combine together. Add the buttermilk and bananas, mix together to form a soft dough.
  2. Tip onto a floured board and lightly knead. Cut dough in half and form into 2 round shape with a smooth top. Place on a non-stick baking tray and cut a large cross on the top. Bake for about 30 minutes or until golden and sounds hollow when base is tapped.
  3. Allow to cool slightly and serve thickly sliced and buttered.
