Banana soda bread recipe

This is not your classic loaf. Flavoured with buttermilk and bananas, this fruity take on Irish soda bread is simply delicious - all you need is a hearty helping of butter to spread on top.

Ingredients
- 250g (8oz) self raising wholemeal flour
- 250g plain flour
- pinch salt
- ½ tsp bicarbonate of soda
- 2 tbsp golden caster sugar
- 300ml (10fl oz) buttermilk
- 2 ripe bananas, thinly sliced

Method
- Preheat oven to gas 6, 200ºC, 400ºF. Place the flours, salt, bicarbonate of soda and sugar into a large bowl and combine together. Add the buttermilk and bananas, mix together to form a soft dough.
- Tip onto a floured board and lightly knead. Cut dough in half and form into 2 round shape with a smooth top. Place on a non-stick baking tray and cut a large cross on the top. Bake for about 30 minutes or until golden and sounds hollow when base is tapped.
- Allow to cool slightly and serve thickly sliced and buttered.
