Ingredients

  • 500g plums
  • 75g light muscovado sugar
  • 50g butter, cubed
  • 125g self-raising flour
  • ½ tsp baking powder
  • 75ml milk

Method

  1. Preheat oven to gas 4, 180°C, fan 160°C.
  2. Put 2 plums aside, halve the remaining plums and stone them. Cut into quarters and divide between four ramekins, filling them generously. Sprinkle with 25g of the sugar and add 2 tablespoons of water.
  3. In a bowl place the remaining sugar, butter, self-raising flour and baking powder and rub together with your fingertips until it resembles breadcrumbs.
  4. Make a well in the middle of the mix, pour in the milk and mix to form a ball, knead briefly until smooth.
  5. Divide into four and roughly shape to fit the top of the ramekins and place on top.
  6. Cut the reserved plums in half and remove the stone. Top each dish with half a plum, pushed into the mix, and bake in the oven for 25-30 minutes, until golden on top.
