American-style braised beef

You can't do much better than sumptuous slow-cooked beef and this quick-to-prep braised beef makes for a tender dish with meat that falls off the fork. Cooked on a bed of root vegetables, you can file this one under cosy warming dinner.

Ingredients

  • 3 large carrots, each cut crosswise into 3 pieces
  • 3 medium swedes, quartered
  • 2 large onions, quartered
  • 2kg beef brisket
  • salt
  • pepper
  • 2tbsp vegetable oil
  • 12oz dark beer
  • 2tbsp brown sugar
  • ¼tsp ground cinnamon

Method

  1. Place carrots, turnips and onions in a 5- to 6-quart slow cooker. Sprinkle beef with 1 teaspoon of the salt and ¼ teaspoon of the pepper. Heat oil in large skillet over medium-high heat until hot.
  2. Cook beef 6 to 9 minutes or until browned, turning once. Place over vegetables in slow cooker.
  3. Bring the beer, brown sugar and cinnamon to a simmer in same skillet over medium-high heat, stirring to scrape up any browned bits from bottom of skillet. Stir in remaining ½tsp salt and ¼tsp pepper. Pour over beef.
  4. Cook, covered, on low for 3 hours or until meat is very tender when pierced with fork.
