The cane is harvested and pressed to extract the fresh juice, which is then slowly evaporated at low temperatures and ground into fine granules -- with no chemical processing, bleaching, or centrifugal separation involved. Because the natural molasses content remains intact throughout production, Rapadura has a distinctive golden-brown colour and a deep, rich caramel flavour with warm notes of toffee and a hint of honey. It dissolves easily and adds complexity to both sweet and savoury dishes. Panela and Rapadura are traditional names used across Latin America for this style of whole, unrefined cane sugar.
