The Chefs Choice Trizor XV Edgeselect Sharpener chages the way you sharpen and keep your knives sharp - it allows you to hone and sharpen your knives using 15°XV technology.This sharpener takes 1 minute to sharpen knives for the first time then only approximately 10 seconds to resharpen there after.Complete with a three stage process and efficient flexible stopping disks that create minimal metal removal. Stage 1 – Creates extremely fine micro grooves, creating the first major bevel of the arch shaped edged. Stage 2 – Uses even finer diamond abrasives on conical disks which work to shape the second smaller bevel with finer microgrooves. Stage 3 – Uses the patented flexible abrasive stopping disk system to create a microscopically smooth, sharp edge. Creating the third and final bevel while polishing the micro-grooves formed in stages 1 and 2.
