Regional Information

The Castillon-Côtes de Bordeaux appellation is located east of Saint-Émilion, on the right bank of Bordeaux, as a natural extension of its great terroirs. It is distinguished by its clay-limestone hillsides and rolling terrain, which are particularly well-suited to producing structured and balanced wines. Long considered a lesser-known appellation, it is now experiencing a real resurgence, driven by investments in quality and a new generation of winemakers.

Vinification Details

The winemaking process at Château Hyot begins with a rigorous selection of vineyard plots and a sorting of the grapes both in the vineyard and in the winery, followed by complete destemming. Fermentation takes place in temperature-controlled stainless steel tanks at around 28°C, after which the wine is gently pressed. Finally, aging lasts between 12 and 24 months under controlled conditions to refine the structure and aromas.

History

Château Hyot is a property in Castillon-Côtes de Bordeaux that is now part of Domaines Alain Aubert, a family-owned group based on the Right Bank. The estate is part of the development initiative led by the Aubert family, which has gradually enhanced this vineyard by leveraging the quality potential of the Castillon terroirs. Today, it benefits from the family's technical expertise and long-term vision, while retaining its own distinct identity within the appellation.
