Expertly crafted and perfected for rich, aromatic flavour Our salmon sides are hand salted using Blackthorn Sea Salt and Demerara sugar, then dry cured for a minimum of 15 hours. A bespoke wash off method and extended 24 hour conditioning time allow the flavour to gently develop. Steeped in cold brew coffee for a minimum of 24 hours, made from 100% Arabica beans and cold water extracted over several hours for a naturally smooth, full bodied flavour. Triple smoked over mesquite, beech, and oak wood chips and matured for at least 36 hours. This salmon delivers an aromatic, smoky depth with a subtle coffee finish. Storage

Suitable for freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Defrost thoroughly for a minimum of 3 hours in the fridge. Once defrosted use within 24 hours and do not refreeze. Follow the preparation guidelines above. Keep refrigerated. Once opened, consume within 2 days and by 'use by' date shown.
