Vinification Details

All fruit was hand-picked and whole-bunch pressed. Yeast strains were selected to encourage the preservation of primary red fruit flavours. Fermentation took place in stainless steel for around 14 days prior to malolactic fermentation. Bottle-fermented and lees aged for a minimum of 18 months prior to disgorgement.

History

Established in 1972, Bolney Wine Estate in West Sussex was one of the first, and remains one of the most beautiful, English wine estates. Guided by nature, the founders discovered the best varieties of grapes to grow in the mild climate and the sandstone soil. The Bolney team have gone on to produce award-winning still and sparkling wines from their famous Pinot Noir and Pinot Gris to the classic sparkling Bolney Bubbly and Blanc de Blancs.

Regional Information

Bolney Wine Estate is located in West Sussex, England. The soil type at the Estate is predominantly Upper Tunbridge Wells Sand, which allows good heat retention and excellent drainage. Bolney also use the Sylvos training System on their vines which requires a lot of time for pruning and trimming. However, the fruit grows much higher with this method, which helps to mitigate frost damage for a more successful harvest.
