Tesco Finest dry cure gammon is cured by hand to a traditional recipe developed by the legendary Woodall family of Cumbria, who first began curing gammon back in 1828.Outdoor Bred Traditionally cured by hand using the Woodall's family recipe and smoked over oak and beech chips for a full flavour.

Preparation and Usage

Cooking instructionsRemove from the refrigerator and remove all packaging. Rest at room temperature for 20 minutes before cooking. Pat the rind dry with kitchen paper. Cover the rind evenly with 1 tsp of vegetable oil and a pinch of salt, working it into the cuts. Place the gammon on a foil-lined baking tin and place it on the middle shelf of a pre-heated oven. Cook for 45 minutes, rotating halfway through the cooking time. If the crackling is still a bit soft, keep the oven at the same temperature for another 10 minutes. If crisp, reduce the temperature and cook for a further 45 minutes.Oven: 240°C/Fan 220°C/gas 9Chilled 45 minsReduce temperature and cook for a further:Oven 200°C/fan 180°C/gas 6Chilled 45 minsAllow gammon to rest for 15 minutes before carving. Carefully remove the strings with scissors, remove the crackling with a knife and cut into small pieces.CautionThis product contains raw meat. Suitable for freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Defrost thoroughly for a minimum of 24 hours in the fridge. Not suitable for cooking from frozen. Once defrosted use within 24 hours and do not refreeze. Follow the preparation guidelines above. Keep refrigerated. Once opened, consume within 2 days and by 'use by' date shown.

Oven
