Oven

Instructions: Oven 220°C/ Fan 220°C/ Gas 7 Remove outer packaging and place seasoning sachet to one side. Gently lift the Wellington off the baking paper insert and place to one side. Lightly oil the paper to prevent sticking, then place the Wellington back on top and trim the paper just wider than the pastry. Allow the Wellington to rest for an hour at room temperature before cooking, use the packaging tray as a cover. Place a flat baking tray into a pre-heated oven and allow to heat up. For best results glaze the Wellington with egg before cooking to ensure a golden finish. Carefully place the Wellington on the baking paper onto the baking tray. Take care when handling the tray as it will be very hot. Place into the centre of the pre-heated oven for 20 minutes. Reduce the temperature to 200°C/Fan 200°C/Gas 6 and rotate the baking tray. For medium product cook for a further 15 minutes For well done product cook for a further 30 minutes. Remove from the oven and discard the baking paper. Place on a wire cooling rack. Using a small sharp knife gently pierce 6 holes along the length of the bottom of the Wellington and allow to rest for 15 minutes. To serve cut the Wellington directly in half with a sharp serrated knife, trim the pastry ends from both halves (around 15mm is sufficient) then cut the remaining pieces into desired portions. To finish, season with a sprinkle from the sachet provided.
