Preparation and Usage
You will need: 125g mixed fruit; 110ml warm water; egg or milk for glazing. Optional: soak the fruit in brandy for minimum 1 hour before making.
Cooking Time: 15-18 mins
Makes: 6 mini panettone
Method: Oven
PREPARE THE DOUGH
1. Add the panettone mix and warm water into a large bowl and mix in a mixer fitted with a hook for 2 mins slow and 7 mins medium speed.
Or knead by hand for 10 minutes until a smooth dough is formed.
2. Add the fruit and mix for 2 mins on slow speed or until mixed throughout the dough.
3. Divide the dough into 6 equal pieces (80g approx.), then roll each piece into a smooth ball.
4. Place into the panettone cases.
5. Cover with a damp cloth or loose cling film and prove for 1 hr-1hr 30 mins or until doubled in size.
6. Lightly brush the dough with egg or milk.
7. Bake for approx. 15-18 mins, until golden at 180°C /Fan 160°C / Gas 4.
