Unsmoked rind on dry cured gammon joint.Tesco Finest Dry Cured Gammon is made from British Outdoor bred pigs, which are selected for their superior succulence and flavour. All of our pigs come from carefully chosen, trusted farms that are certified to the RSPCA's higher welfare standards. Tesco Finest dry cure gammon is cured by hand to a traditional recipe developed by the legendary Woodall family of Cumbria, who first began curing gammon back in 1828. It is then traditionally air dried for depth of flavour.Traditionally cured by hand using the Woodall's family recipe and air dried for a full flavour. Suitable for freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Follow the preparation guidelines above. Once defrosted use within 24 hours and do not refreeze. Not suitable for cooking from frozen. Defrost thoroughly for a minimum of 24 hours in the fridge. Keep refrigerated. Once opened, consume within 2 days and by 'use by' date shown.

Oven

Instructions: 1st Electric 240°C / Fan 220°C / Gas 9. 2nd Electric 200°C / Fan 180°C / Gas 6 Chilled: 30 mins per 500g plus 30 mins. Preheat the oven. Rest at room temperature for 15 minutes before cooking. Pat the rind dry with kitchen paper. Cover with a teaspoon of vegetable oil and a pinch of salt, working it into the cuts. Place the gammon on a foil lined roasting tray and cover the meat with foil keeping the rind exposed, this will help it crackle. Place roasting tray on the middle oven shelf and cook for 45 minutes. After this time, reduce the temperature down to 200C /180C Fan / Gas mark 6 and cook for the rest of the time. Remove from the oven and allow to rest for 20 minutes before carving. Carefully remove the strings with scissors, remove the crackling with a knife and cut into small pieces. Check food is piping hot throughout and all juices run. Carve the joint and serve.
