d'Arenberg The Hermit Crab Viognier 75cl
Since 1912 the Osborn family has tended vineyards in McLaren Vale, South Australia. Today, fourth generation family member Chester makes distinctive wines using traditional methods both in the vineyard and the winery. Small batches of grapes are crushed gently, chilled, and then basket pressed. To add complexity and mouthfeel a small percentage of Viognier and Marsanne is fermented and matured in French oak for eight months. Many of McLaren Vale's vineyards are underlain with limestone formed by calcareous remains of local marine fauna, such as hermit crabs. 'Hermit' is also an abbreviation for the French appellation where the Marsanne variety dominates, an appropriate name for McLaren Vale's first ever blend of these varieties.

Vinification Details

Small batches of grapes are gently crushed and transferred to stainless steel basket presses. Fermentation is long and moderately cool, retaining fresh fruit characters. About 4% underwent wild fermentation for extra complexity. 14% of the Viognier is fermented in aged French and American Oak. Blending occurs only in the final stages of the winemaking process.
