Chipotle BBQ Quesadillas

Shopping list / Ingredients to buy:
400g tinned black beans
1 red bell pepper
4 tortillas
80g grated Cheddar cheese
150ml sour cream
Optional: fresh coriander and lime wedges
Method:
- Pre-heat the oven to 160°C/Fan 140°C/Gas 3.
- Dice the red bell pepper into chunks, fry in 1 tbsp oil for 5 minutes. Drain, rinse and add black beans, pressing lightly with the back of the spoon to crush them slightly. Add the dry seasoning and cook for 5 minutes, remove from pan and set aside.
- For the dipping sauce, stir the seasoning paste into the soured cream and keep aside.
- Clean out pan and heat 1 tbsp of oil over a medium heat, place a tortilla in the pan. Add a layer of grated cheese, bell pepper and bean mixture. Top with another tortilla.
- Place a plate over the frying pan and use to flip over. Cook for 2 more minutes, place in the oven to keep warm whilst making the next quesadillas. Cut in quarters and serve alongside dipping sauce.
