Preparation and Usage
Chipotle Chicken Fajitas.
Serves 3.
Cooking time: 8-10 minutes.
Method: Hob & Microwave.
Ingredients: 1 Tesco Free From Smoky Chipotle Fajita Kit; 450g chicken breast fillets, cut into thin strips; 2 large mixed peppers, de-seeded and sliced; 1 large onion, sliced. Additional garnish (optional): Cheese or dairy free alternative; fresh coriander, chopped; sliced jalapenos.
Method:
1. Cut your chicken into strips and coat with the fajita seasoning.
2. Heat a small amount of oil in a pan on a medium heat and add the chicken. Fry for 3-4 minutes until brown and cooked through.
3. Add the onion and sliced peppers and cook for a further 4-5 minutes.
4. To heat the tortillas, pierce a hole in the pack, place in the microwave and heat on full power for 30 seconds at 800W or 900W.
To serve: Spoon the filling into the middle of a pre-heated tortilla, top with the smoky chipotle salsa (plus additional garnish if required).
Tip: For a vegetarian option, swap the chicken for roasted sweet potato or mushrooms.
