Preparation and Usage
Chipotle Chicken Fajitas:
Serves 3
Cooking Time: 8 -10 minutes.
Method: Hob & Microwave
Ingredients:
450g chicken breast fillets, cut into thin strips; 2 large mixed peppers, de-seeded and sliced; 1 large onion, sliced.
Additional garnish (optional)
- Cheese or dairy free alternative.
- Fresh coriander, chopped.
- Sliced jalapenos.
Method:
1. Cut your chicken in to strips and coat with the fajita seasoning.
2. Heat a small amount of oil in a pan on a medium heat and add the chicken. Fry for 3-4 minutes until brown and cooked through.
3. Add the onion and sliced peppers and cook for a further 4-5 minutes.
4. To heat the tortillas, pierce a hole in the pack and place in the microwave on full power for 30 seconds.
5. To serve: Spoon the filling in to the middle of a pre-heated tortilla, top with the smoky chipotle salsa (plus additional garnish if required)
Tip: For a vegetarian option, swap the chicken for roasted sweet potato or mushrooms.
