Preparation and Usage
Katsu Chicken Curry
Serves 2
Cooking time: 7-9 minutes.
Method: Hob and Microwave.
Ingredients: 1 Tesco Free From Katsu Curry Meal Kit; 350g skinless chicken breast; 250g cooked rice.
Method:
1. Prepare the batter mix. Tip the batter mix into a bowl and add 4 tablespoons of water. Mix until you have a smooth paste.
2. Butterfly the chicken by slicing into one side of the breast, starting at the thick end and ending at the thin point. Be careful not to cut all the way through. Open out the chicken breast and season as required.
3. Dip the chicken breast in the batter mix, then coat evenly in the breadcrumbs.
4. Shallow fry in oil for 6-8 minutes, turning halfway, until golden brown and fully cooked.
5. Remove the fully cooked chicken from the pan, and allow to rest.
6. Empty the katsu curry sauce into a microwaveable container and heat on full power for 1 minute at 800W or 900W.
To serve: Place the chicken on top of the rice, pouring the sauce on top.
Tip: For a vegetarian option, swap the chicken for roasted sweet potato or cauliflower.
