Preparation and Usage

Remove all packaging including paper insert. Allow the joint to rest at room temperature for 30 minutes before roasting.

When cooked according to instructions.--

Keep refrigerated. Once opened, consume within 1 day and by ‘use by’ date shown. Not suitable for freezing.

Oven

Instructions: 180°C/Fan 160°C/Gas 4 Carefully place the joint in the centre of a deep sided roasting tray, positioned so the bones are curved downwards to support the joint during cooking. Place in the centre of a pre-heated oven. For a medium roast cook for the recommended time on the front of pack (6 minutes 30 seconds per 100g). A medium roast will be pink in the middle. For a well done roast cook for 8 minutes per 100g. Baste the joint, every 45 minutes, with the melted caramelised coating, using a large spoon to drizzle it over the joint. Remove from the oven, place the joint on a carving board, cover with foil and allow to rest for 20 minutes. Retain the cooking juices to make the sauce suggested below. To finish, remove the strings, carve and serve with the sauce made from the retained juices (see below for recipe).
