Preparation and Usage
Cooking time: 14-16 minutes.
Method: Oven.
Makes: 6 cupcakes.
You will need:
1 medium egg
4tbsp (60ml) water
160g softened unsalted butter
cupcake or muffin tray
Cupcakes:
1. Pre-heat the oven to 180ºC / Fan 160ºC / Gas 4.
2. Place the bun cases into a cupcake tray.
3. Empty the cake mix sachet into a large bowl and add 1 medium egg and 4 tbsp (60ml) water and mix with an electric whisk for 1-2 minutes until combined.
4. Divide the mixture between the cupcake cases and bake in the centre of the oven for 14-16 minutes until risen.
5. Cool in the tray for 5 minutes before transferring to a wire rack.
Icing:
1. Empty the white icing mix (saving the icing mix bag for piping later) into a bowl and add 80g softened unsalted butter and mix well until light and fluffy.
2. Empty the green icing mix (saving the icing mix bag for piping later) into a bowl and add 80g softened unsalted butter and mix well until light and fluffy.
3. Fill the white and green buttercreams back into each of the icing bags and carefully cut off the corner of each bag to create piping bag.
4. Once cooled top the cupcakes with the green/white buttercream, sprinkles and wafer feet to create cute Easter bunnies.
