White Wine"A droite du Serein" is made from carefully selected Chablis Premier Cru vineyards, all situated on the right bank of the Serein river. Centuries of erosion have shaped these south and southwest facing hillsides into the ideal source for wines of outstanding quality. The famous Kimmeridgian and Portlandian soils add depth of flavour and complexity, which is amplified by aging on lees. Since 1814, a deep understanding of these terroirs has been passed down the chain, today sitting with head-winemaker Lucie Depuydt. This knowledge, combined with exacting environmental standards, enables J. Moreau & Fils to get the very best out of these small plots. Enjoy now or cellar for up to 5 years. On the right bank of the Serein river, which runs through the heart of the village of Chablis, sit some of the world's most famous vineyards. Vinification Details

After careful hand harvesting of grapes from the right bank of the Serein, the grapes are gently pressed. The juice is left to settle to ensure the purest aromas and a bright gold colour. The fermentation takes place in steel tanks, using special Chablis yeasts, under controlled temperatures of 18°C. 20% of the wine is aged in oak barrels to bring extra complexity, but not over power the incredible fruit characters. The whole wine is then aged on lees to add even more character, flavour and finesse.

History

Since 1814, J.Moreau & Fils, who started life as barrel makers, have owned and ran the oldest wine house in Chablis. The family worked hard to build up an immense understanding of the varying terroirs of Chablis. This knowledge was been passed down over the centuries and now sits in the talented hands of head-winemaker, Lucie Depuyt. Combining individual plot management with highly exacting environmental standards, enables J.Moreau to get the absolute best out of every vineyard.
