Vinification Details

Cold stabilization for a few days followed by selected yeasts. Fermentation under controlled temperature. Ageing: on lees with regular stirring for 40 days in epoxy-coated cement tanks.

History

Resistant grape varieties are grape varieties that are specially crossed to be more resistant to diseases and pests, reducing the use of treatments in our vineyards. Resistant grape varieties are particularly important due to climate change, as they are better adapted to extreme conditions such as drought or higher temperatures. They do not require phytosanitary treatments for protection. This allows us to keep our ecological commitment by reducing our environmental impact while producing quality wines.

Regional Information

Paul Mas vineyards are situated in the Languedoc region of South of France between Pézenas and Montpellier, 10 km from the Mediterranean. They cover an area between l'Ile de Conas (39ha) near Pézenas, the vineyards of Nicole (80 ha) near Montagnac and Clos du Moulinas (42 ha) in Caux. Our labels feature “Vinus the heron”, the emblem of our vineyards, in front of the Conas castle where the Paul Mas story started.
