Red WinePaul Mas Réserve Single Vineyard Collection wines come from Jean-Claude Mas's vineyards in Occitanie region in the South of France. Conas vineyard is located on the hillsides of the Hérault Valley, around the Château Paul Mas, the cradle of Domaines Paul Mas. Our family has a winemaking tradition of over 100 years. The vines are planted in Clavey and chalky soil with fossils and enjoy a unique microclimate. The wine is vinified with traditional methods, long maceration and then aged in oak barrels, resulting in a quintessence of red and black berry flavours evolving towards plum and cocoa notes. On the palate you will discover a refined wine, velvety and rich. Our Merlot will charm your palate with its appealing character!

Vinification Details

Destemming of the grapes, maceration for 3 to 4 days at 10 ° C for colour and aromas extraction. Fermentation at 25°C for 5 to 7 days with selected yeasts. Traditional maceration for 15 days at 25/28°C. The first press is reincorporated to the free run juice wine. Ageing: aged in new American barrels for 6 months (40% new, 30% 1 year, 30% 2 years).

History

The legend of Vinus, the Heron, started on the Hérault Riverbanks, at the foot of Château Paul Mas in Pézenas. Château Paul Mas is made of 2 Estates: the Castle and a 25-ha vineyard in Conas, near Pézenas, the cellar and an 80-ha vineyard in Nicole, near Montagnac. The Paul Mas Reserve range is composed of wines that come from the different vineyards and estates that make up the Paul Mas Domaines: Ceyras, St Hilaire, Montagnac, Pezenas, Malras.
