Vinification Details

The grapes are Machine Harvested between August & September before being destemmed, crushed and loaded into Stainless Steel tanks for fermentation. Oak chips are added to give the wine subtle cedar aroma and round finish.

History

California's most famous grape variety - Cabernet Sauvignon dates right back to the 1850's when grower Antoine Delmas planted the first Cabernet vines in Santa Clara Valley. International recognition of California's arrival on the scene came in 1976 with the “Judgment of Paris” blind tasting, in which Stags Leap Wine Cellars 1973 Cabernet Sauvignon famously dethroned several top red Bordeaux.

Regional Information

The wines produced in California account for nearly 90 percent of entire American wine production. The production in California alone is one third larger than that of Australia. If California were a separate country, it would be the world's fourth-largest wine producer.
