Preparation and Usage

Cooking instructions1 Finely dice the onion.2 Dice the courgette into small cubes.3 Dissolve the stock in 700 ml boiling water from the kettle and keep to one side.4 In a saucepan or a high sided frying pan, heat 2 tbsp of oil on medium heat.5 Add the diced onion and fry gently for 3-4 minutes until soft.6 Add the rice and dry fry for a minute, then add 1/3 of the stock.7 Simmer the rice, stirring often until the stock has been absorbed.8 Wash and strip the thyme leaves and add to the risotto.9 Add the same amount of stock again, and continue to simmer and stir until the rice starts to be creamy and plump.10 Add the final 1/3 of stock and the remaining vegetables and continue stirring until the rice is cooked.11 Turn off the heat, add the nutritional yeast, a knob of butter, drizzle of olive oil and season to taste with salt and pepper.Wash all vegetables before use.
