Preparation and Usage
Remove the mussels from the packaging, decant into a colander and allow to rest for 5 minutes.
Rinse thoroughly under fresh running cold water for a few minutes. Agitate and tap firmly to stimulate any open mussels to close.
The protective atmosphere can make mussels sleepy and slow to react to the agitation. If any mussels are gaping widely at this stage, close the mussel between your fingers for 2 seconds, release and observe. Does the mussel stay closed when released or open slowly and begin to close back over? This movement suggests the mussel is alive. If the mussel continues to gape widely and shows no sign of closing over, the mussel is likely dead. Discard any mussels identified as dead.
Remove any threadlike fibres from the shell by firmly pulling away and if desired, using a blunt knife scrape off any barnacles.
Mussels that closed during rinsing may reopen again prior to cooking. This is perfectly natural. They are alive and safe for use.
